Today I decided to experiment in the kitchen. I knew I wanted to make pumpkin muffins, but thought about how I could make them easy, delicious and nutritious. You will notice that most recipes I post use simple ingredients that you often already have at home. For this recipe I mixed together a few of my favorite things, placed them in a muffin tin and baked. The result was a yummy gluten free, dairy free, egg free, vegan muffin! Lucky for me (and anyone who decides to give this recipe a try) this was an experiment gone right!
