Have you tried Cauliflower rice? I personally buy the pre “riced” cauliflower since I am all about convenience and making things simple when it comes to cooking. Trader Joes sells cauliflower rice fresh and also frozen! While I buy them both, the frozen variety is a staple in my freezer so that I can always have it on hand! If you do not have a Trader Joes near you, cauliflower rice is appearing on the shelves of many local markets!

Cauliflower is a cruciferous vegetable and cruciferous vegetables are high in glucosinolates, and glucosinolates have been shown to have cancer preventing properties.
Cauliflower is also a good source of vitamin C, fiber, Vitamin K, Folate and Vitamin B6.
Something great about cauliflower rice is that it is so versatile to cook with and it can be used with so many different flavors. My favorite way to cook cauliflower rice is sautéed stove top with sesame oil and chile powder. Shown above I added in sautéed mushrooms and roasted chickpeas. I usually have this as a side dish with fish, and have even used it as a base to make paella. Yum!
